Gourmet cuisine at the Ultimate Hideout is as distinctive as the Big Bend setting—a blend of West Texas wild game and ingredients with a south-of-the-border flair. Each of Lajitas four eateries takes a different approach, so the cuisine is delightfully varied.

 

The fine-dining Ocotillo Restaurant offers the Cowboy Cuisine of renowned Executive Chef Al Cannito in an elegant setting, while Southwestern dining with golf course views defines the Candelilla Café. The Thirsty Goat Saloon and the Trading Post Café are casual eateries catering to those who are on the go at Lajitas or desire less formal dining.

 

Ocotillo


OcotilloRattlesnake Cakes, Hot and Crunchy Trout with a Mango Jalapeno Aioli, Vegetarian Chile Rellenos, and Jackrabbit Stuffed Venison--a few examples of the edible artistry of Executive Chef Al Cannito. The Ocotillo menu delights the palate with indigenous ingredients and regional game, while an extensive wine list compliments every offering.

 

A relaxed yet elegant atmosphere prevails at the Ocotillo with an expansive bar, third-level observatory with unmatched views of the Rio Grande and Mexico, a members dining rooms, and formal guest dining room. Reservations are required.

 

Candelilla Cafe

 

Candelilla CafeThe Southwestern Candelilla Café incorporates bold flavors such as Oaxaca mole sauce and poblano peppers into contemporary cuisine presenting dishes such as Tijuana Caesar Salad and Oven Roasted Achiote Rubbed Chicken. If you’re not feeling adventurous, the menu includes some traditional favorites such Hot & Crunchy Chicken Breast and the Five Napkin Cheeseburger.

 

Serving breakfast, lunch, and dinner daily, the menus vary from meal to meal so lunch overlooking the golf course and dinner watching the sun set behind the mountains are two entirely different experiences.

 

Lajitas Trading Post

 

Lajitas Trading PostA morning isn't complete without a stop into the Lajitas Trading Post where bakery items such as fresh bread, pastries and breakfast burritos are served daily with a steamy coffee. Recommended after the morning walk or on the way to the first hole on the Ambush.

 

Fresh fruits and vegetables, grocery staples, postcards, and miscellaneous travel necessities may all be found in this 19th-century trading post. It's also the last gas stop for many, many miles depending on which directions you're headed.
